Possible Substitutions in Cooking
Ground Beef - Chicken - Beef - Pork
• Canned ground beef, beef chunks, chicken and pork (Many of these
products are available from the cannery and other stores.)
• Some people like to rinse the canned meats in a mesh strainer (This
makes it taste more like fresh meat.)
• Meats can be browned in a little oil. Can also add onion or
dehydrated onion while browning.
Cheese
• Homemade mozzarella cheese made from powdered milk
• Canned Cheddar Cheese Soup
• Grated canned cheese
• Bottle of processed cheese spread or Velveeta
• Cheese powder
• Leave out
Chicken Broth
• Water with chicken bouillon
Sour Cream
• Homemade yogurt from powdered milk. Drain in cheesecloth for sour
cream
• Powdered sour cream
• Canned milk (adds creaminess)
• Powdered milk—reconstituted (adds creaminess) Could make
powdered milk double strength.(Mix two times the amount of powder in.)
Buttermilk
• 1 c. water, 1/3 c. powdered milk, 1 T. vinegar or lemon juice
• Add buttermilk powder to water
Eggs
• Powdered whole eggs (Can add applesauce, pumpkin, etc. if you
notice the taste.) Use a small mesh strainer and press the powdered
eggs through with the back of a spoon. This “sifts” the egg so it
blends in.)
• Powdered egg whites. (Can be added to dry ingredients. Also, can be
“reconstituted.” Mild tasting and unable to detect in baked goods.
• Applesauce, pumpkin (and other pureed fruits and vegetables) hold
baked goods together. Small jars of baby food work well for this.
• Flax jell
• Tapioca starch jell
• Commercial egg replacer
Cream of Mushroom Soup
• Homemade soup from powdered milk
• White sauce from powdered milk
Butter
• Coconut oil/butter (Substitute 1/3 cup for each ½ cup in recipe.)
Organic, expeller has a long storage life if stored in a cool place.
• Can add a little powdered butter for flavor.
• Shortening. Crisco has an indefinite shelf life. However, it is a
hydrogenated fat which is associated with health problems. There are
also non-hydrogenated shortenings available.
• Powdered shortening
• Canned butter
Carrots, 2 medium
• ½ cup dried diced carrots + 1 cup water
Celery, 1 stalk, sliced
• 1 to 2 Tablespoons dried sliced celery
Green pepper, ¼ cup
• 2 tablespoons dried, diced green pepper
Onion, 1 medium
• ¼ cup dried minced onion + 6 T water OR 1 teaspoon onion powder
Garlic, 1 clove
• ¼-1/2 teaspoon dried minced garlic OR 1/8 teaspoon garlic powder
